In this video from Fit Men Cook we have Zucchini Bites as our quick meal prep recipe. This recipe is not only full of flavor but also super simple to make.
We will be making some Parmesan Zucchini Bites that would go well with almost any meal but is also good for just snacking. Just to start off he re-iterates the reason why so many Zucchini recipes fail, which is because you don’t squeeze out the moisture. So if nothing else, remember that if you have to grate a Zucchini for a recipe you should probably squeeze out all the moisture as it will affect the end result.
The first thing to do is to prep one medium Zucchini. Chop off one end of it and then grate it over a cheese cloth. Roll it up tightly in the cheese cloth and then just squeeze out that excess moisture. Now take the Zucchini and add it to a bowl, ready for the rest of the ingredients.
Add in one teaspoon of garlic powder, one teaspoon of onion powder, two teaspoons of freshly ground rosemary and half a cup plus 2 tablespoons of fine almond flour. Next up add in one cup of shredded Parmesan cheese. Last but not least add two eggs lightly eaten to the mix as well as some salt and pepper to taste.
Give everything a good stir, folding and mixing it together until it becomes a nice sticky batter. Here you see why you need to squeeze out the moisture from the Zucchini, to make sure you get a nice sticky batter and not a soggy one.
Grab a baking tray lined with some parchment or non-stick foil. To keep things uniform he uses an ice cream scoop that helps the balls to maintain their shape as much as possible. Once all of them are loaded to a quick spray with Avocado oil over it. This will help the snacks get nice and crispy.
Bake them in an oven pre-heated to 420 degrees for 9 to 10 minutes or until they are golden and crispy on the outside.
As simple as that! Put them in a plate and they are a great accompaniment to any dinner. The outside is really firm and crispy with the inside nice and soft. Yummy!
