I can’t believe I have not shared my best ever recipe for keto fried rice before!? This cauliflower fried rice is one of my go to recipes and was adapted from my old fried rice recipe that features lots of veggies, soft scrambled eggs, and coconut aminos. This entire keto meal prep recipe is low carb and is served with my Chinese 5 spice crusted chicken thighs. This low carb keto meal prep recipe makes 5 servings for the week and only has 10 grams of net carbs per serving. Do yourself a favor and grate your own cauliflower rice, don’t but the frozen or pre-made one at the store, homemade riced cauliflower will have the best texture for this keto fried rice.
