Mini Sweet Potato Quiches FTW!
Sweet Potato Quiches is on the menu in this video by The Protein Chef.
The Chef has lately really been enjoying prepping smaller portions. So he decided to explore it doing a Mini Quiches Meal Prep. You start of with a bowl where you add 1 to 2 cups of baby spinach. Use your hands to shred the spinach in the bowl. Watch the video because you will see exactly how it is done! When you are done shredding the greens you add 2 large whole eggs in to the bowl. Then add to this mixture one cup of milk and one cup of cottage cheese. Add 4 tablespoons of Coconut Flour rather than wheat flower.
You are not done yet! Now add 2 ounces of Feta and a little bit of black pepper. Now you will add any other vegetable you want. The chefs favorites tends to be Bell Pepper and chopped Onion. Mix everything together using a mixer and put aside for a bit later.
