Rice and Beans Easy Meal Prep!

Rice and Beans is a healthy meal prep recipe and what the Fit Couple Cooks are showing us today.

Today’s recipe is inspired by the couple’s trip to the food truck where they had this dish. They really enjoyed it so they thought that it would be a perfect meal prep. The dish is easy to make as well as quick to make and inexpensive.

To give the recipe a bit more of a healthy spin you will make brown rice. You just cook the rice in water in a pot on the stove like you would do with any other rice. To add some some flavor to the dish you will start off with a white onion and a clove of garlic. You will finely dice the onion and garlic to prep it and this will eventually go into the pan. For this recipe they use two table spoons of Coconut Oil to grease the pan. You can really use any oil you want but coconut oil is a very good and healthy option.

Add the diced garlic and onion to the pan, stir it a bit and then leave it to cook. While that is happening you can get the beans ready.
