Easy meal prep for Breakfast!

Breakfast is not often considered when doing a meal prep but this video by Fit Couple Cooks shows just how easy it is.

Today the cooks are going to show us how to make tasty Zucchini cakes. Not only is it easy to make but it is affordable too. They can be used in both a meal prep as well as a snack. They do look really yummy and reminds me of a kind of savory pan cake.

The protein being added to this dish is of course eggs which you add 10 of in a big mixing bowl. Then you add in your salt and pepper and whisk it all together. You will dice one onion and add it in to the eggs making sure you mix everything together again.

Once this initial work is done it is time to grate the Zucchini which is also called Baby Marrow in some areas. It is quite a watery vegetable so you will need a cloth. Watch the video to see the technique used to grate this veg and cook the whole meal.
