Healthy Lemon Bars – Only 5 Ingredients

Lemon Bars are such a classic treat and in this video from “How To Cook Smarter” we get to see how to make Healthy Lemon Bars. These bars will consist of a rich oatmeal crust topped with a creamy lemon filling.

Consisting of only five ingredients these Healthy Lemon Bars are one of the easiest things to make and delicious to eat.

The cook found that the best way to eat less sugar is to make your own sweet treats using whole unprocessed ingredients. These Healthy Lemon Bars are a great example of this.

You might ask what makes this version healthier? The ingredients in this recipe is all natural and you may already have these in your kitchen. Traditional lemon bars are loaded with sugar and butter or even condensed milk.

The crust is made of only three ingredients. Start by adding one cup of ground oatmeal (100 grams) to a bowl. Next up is a quarter cup of coconut oil (50 grams) that has been melted or softened. Lastly add a quarter cup of honey or maple syrup (85 grams), whichever one you prefer.

Mix all the ingredients using a fork until the dough starts to come together. Now spread the dough in a parchment lined baking pan, pressing it out evenly on the bottom. Make sure you get into all the corners.

Bake the crust for ten minutes at 350 degrees Fahrenheit or 180 degrees Celsius. Once done set it aside to cool. While the crust is cooling we will go ahead and start to make the filling.

In a large bowl beat 5 eggs and then whisk in half a cup of honey (170 grams) and half a cup of lemon juice (120 milliliters). For this recipe he used freshly squeezed lemon juice. Add one tablespoon of lemon zest and a third of a cup of ground oats (35 grams).

For the half cup of lemon juice you will need two to three medium sized lemons. It really depends on how juicy your lemons are. Also one tablespoon of lemon zest is from one lemon.

Mic everything together until well combined. The mixture will be quite watery but that is fine as the thickening will happen in the oven. Pour the mixture over your crust.

Bake it for 20 to 25 minutes at 350 Degrees Fahrenheit or 180 Degrees Celsius. Basically you want to make sure the filling is set and no longer jiggles.

After baking make sure that everything cools down. A good benchmark would be to leave it at room temperature for one hour and then place the whole pan in the fridge for 3 to 4 hours.

Take it out of the pan using the parchment and place on the counter. You can now cut it into the bars.

For serving, if you want, you can sprinkle powdered sweetener over the top. The bar should be about 1 part crust for 2 parts filling, so they are really creamy.
